The invention concerns a powder containing crystalline particles of maltitol, having:

• a speed of dissolution in water, according to a test A, of from 1 minute 30 seconds to 3 minutes;
• a hardness value, according to a test B, of from 400 to 500 N;
• an apparent specific gravity according to a test C, of from 0.550 and 0.650 g/ml;
• a residual water content of from 1.2 to 2%
• a melting point of at least 140 C.,

  as well as tablets, baked goods and chewing gums containing said powder.
