The invention is a method of assessing institutional needs. Particularly,
the needs of institutional, such as university, food service needs can be
assessed according to the inventive method. The method involves the steps
of gathering information about the campus, segmenting the campus and day,
evaluating needs of each segment against existing services, comparing
needs and opportunities to available services, and preparing a report
indicating proposed services.
