Method of cleaning with demineralized water and composition therefor

   
   

Food processing equipment is cleaned with an aqueous detergent composition wherein the water in the cleaning composition is demineralized. This is combined with concentrated detergent and applied at an elevated temperature to the walls of the food processing equipment. The detergent composition has sufficient sequesterant to remove 100% to 110% of any calcium or magnesium ions released from soil that is removed from the surface of the processing equipment, generally an amount effective to remove from about 10 to about 35 parts per million hardness ions.
