The present invention relates to a method for utilizing soy molasses as a source
for soy sugars which are of high oligosaccharaide content. The invention provides
a method for purifying soy molasses comprising the following steps: (i) contacting
the soy molasses with alcohol and hydrocarbon solvent mixture, thereby two layers
comprising a lower aqueous-alcohol layer and an upper hydrocarbon layer are formed;
(ii) collecting the lower aqueous-alcohol layer; (iii) removing coloring, off-flavor
and odorous substances; and (iv) removing minerals, thereby a purified soy molasses
of more than 90 wt. % sugars, on dry matter basis, is obtained.
