A processed soybean material is produced by milling starting soybeans
(non-defatted soybeans or defatted soybeans) to generate soybean powder,
adding water to the soybean powder to make a solution containing the
soybean powder, swelling the soybean powder, heating the solution
containing the swollen soybean powder and then pressurizing the heated
solution. Use of the processed soybean material thus obtained makes it
possible to produce a processed soybean food which is free from the
characteristic smell or coarseness of soybeans and contains fiber
components.
