The invention also relates to the construction of recombinant DNA fragments comprising all or a portion of the isolated chlorophyllase-encoding polynucleotides, in sense or antisense orientation, wherein expression of the recombinant DNA fragment results in production of altered levels of chlorophyllase in a transformed host cell.
