The present invention relates to the use of extracts and compounds of
plants from the Allium genus for the food and agrifood industry
consisting of being used as food preservatives for humans and animals,
plants being harvested or post-harvest plants, as well as for
environmental disinfection, using thiosulfinates, thiosulfonates, ajoene,
vinyl dithiins and products resulting from the decomposition of
thiosulfinates.
