The invention relates to a method for retarding plaster, to the plaster preparation and to a composition for said method. The inventive method consists in using a composition containing in the form of components thereof a sodium trimetaphosphate, tartaric acid and optionally a sodium tripolyphosphate. The use of said composition enables a user to prolong an open processing time, in particular at the end of setting time.
