A new cultivar of Dianthus plant named `STRAWBERRY SORBET` that is characterized by pronounced compact habit, grey-green foliage, and bright red flowers. In combination these traits set `STRAWBERRY SORBET` apart from all other existing varieties of Dianthus known to the inventor.
