A process for making a frozen confection having a total solids content of
less than 10% by weight of the frozen confection is provided, the process
comprising: a) preparing a mix of ingredients comprising water and
having a total solids content of at least 12% by weight of the mix; b)
partially freezing the mix in a dynamic freezer; c) drawing the partially
frozen mix from the freezer; d) combining the partially frozen mix with
an amount of frozen particles to form a frozen confection;wherein the
total solids content of the frozen particle is less than 1% by weight of
the frozen particles; the mean size of the frozen particles is greater
than 0.5 mm; and the amount of frozen particles is chosen such that the
total solids content of the frozen confection is less than 10% by weight
of the frozen confection. A frozen confection is also provided.
