Methods of beverage and flowable food product production using steam
injection are provided to efficiently destroy microorganisms able to
withstand normal pasteurization temperatures. Microorganisms such as
Alicyclobacillus acidoterrestris and its spores may be eliminated from
fruit juices and the like while minimizing organoleptic degradation due
to heating. The apparatus is capable of pasteurizing, blending and
controlling the product specifications of a finished beverage in a
continuous matter.
