Methods and apparatus for providing a fillet of generally uniform
thickness. In one embodiment, a method includes providing a fish fillet
having a loin portion and a belly portion, cutting the loin portion to
provide a butterflied portion that remains attached to the loin portion,
lifting the attached butterflied portion, and manipulating the attached
butterflied portion over to the belly portion to provide a fillet having
a generally uniform thickness across the fillet. In another embodiment, a
fish fillet includes a generally uniform thickness across the fillet.
