There are provided nucleic acids, including isolated DNA molecules, which encode glutamate 2,3-aminomutase enzymes, polypeptides produced from such nucleic acids and methods of making the nucleic acids and polypeptides. There are further provided methods of producing .beta.-glutamate from glutamate using glutamate 2,3-aminomutase.
