This invention relates to a vegetable protein composition of matter
derived from an alcohol washed vegetable protein material, comprising;
having a decreased amount of insoluble dietary fiber content and an
increased amount of soluble dietary fiber content relative to said
original amount of insoluble dietary fiber and soluble dietary fiber in
the alcohol washed vegetable protein material.
The invention further relates to processes for obtaining the vegetable
protein composition having a decreased amount of insoluble dietary fiber
content and an increased amount of soluble dietary fiber content.
