The invention relates to compositions and methods of using the flavor
active peptides, Lys-Ile-His-Pro-Phe (SEQ ID NO:1), Gly-Pro-Phe-Pro-Ile
(SEQ ID NO:2), and Lys-Lys-Tyr-Lys-Val-Pro-Gln (SEQ ID NO:3), to impart a
bitter, salt, dairy or umami flavor to food or pharmaceutical products.
In particular embodiments, the Lys-Lys-Tyr-Lys-Val-Pro-Gln (SEQ ID NO:3)
peptide further imparts a vegetable, brothy, or bready flavor.
