Canola protein isolates consisting predominantly of 7S canola proteins are
formed by isoelectric precipitation from aqueous salt solution extracts
of canola oil seed meal. Canola protein isolates consisting predominantly
of 2S canola protein are recovered from supernatant from the isoelectric
precipitation step.
