Process for sterilising a resistant starch composition comprising: (a) dispersing said resistant starch composition in oil; (b) heating the starch/oil dispersion obtained in step (a) to a target temperature of 100 to 175.degree. C., preferably about 150.degree. C.; and (c) cooling the starch/oil dispersion; sterilised resistant starch obtained by this process and uses thereof.
