Extraction of flavonoid citrus extract from the by-product of a juice
extraction process, to provide a flavonoid-rich citrus extract is
disclosed. The extraction process reduces the level of limonin and/or
bitterants in the by-product extract without affecting the level of
naturally occurring flavonoids, which may be added to citrus-base or
non-citrus-based beverages, or used as a stand-alone juice.
