A process is described wherein there is added to an acidic environment, which contains protein, a block-wise enzymatically de-esterified pectin, and wherein the pectin is a high ester pectin. Also described is a recombinant pectin methyl esterase.

Se describe un proceso en donde se agrega a un ambiente ácido, que contiene la proteína, una pectina enzimático de-esterificada bloquear-sabia, y en donde la pectina es una pectina alta del éster. También se describe un esterase recombinant de metilo de la pectina.
