The present invention relates to dietary fibers and oligosaccharides from Ginseng
and process for preparation thereof, more particularly, to a method of preparing
the dietary fiber from Ginseng by extruding and centrifuging byproducts from Ginseng
extract, in the meantime, preparing the oligosaccharides from Ginseng by treating
byproducts from Ginseng extract with polysaccharides hydrolytic enzymes and the
subsequent ultrafiltration. Thus it provides prominent effects in producing physiologically
active materials such as the dietary fibers and oligosaccharides from the said
byproducts in an environment-friendly manner.
