The invention relates to a translucent food product based on small
granular starch and to the use of small granular starch for the
preparation of translucent food products. It has been found that by using
starch having a specific small particle size, a translucent food can be
prepared having a satisfactory clarity and translucency in the dried and
cooked state, which has earlier been found to be impossible using
non-modified starch.
